Vinification: The grapes are exclusively from the Valdobbiadene hills, gentle pressed with limited skin contact. the primary fermentation happens at controlled temperature with selected yeasts. This sparkling wine undergoes a careful second fermentation in pressure tanks, at the end of which 8 grams per litre of residual sugars are left, hence the name “Zerotto” (zero-eight)
