Serving Temperature: serve at about 18-20°C.
Vinification: The first vinification operations are destemming and crushing, followed by fermentation for about 10 days, with daily pumping over maintaining a constant temperature between 28°C/30°C, for the entire duration of the fermentation itself. After this period we proceed with the racking and with the malolactic fermentation, always in vats, to then begin the refinement in tonneaux.
