Vinification and ageing: Crushing-destemming, short cold maceration and soft pressing, in an environment always protected from oxygen, precede the clarification of the flower must which occurs by natural sedimentation at low temperature. Long fermentation in refrigerated stainless steel vats and subsequent refinement, for several months, with frequent resuspension of the fine lees. The use of sulfur dioxide is minimal and regulated until bottling.
Description: The wine, elegant to drink, is a harmonious expression of the varietal traits of the different vines, enhanced by the fine mineral note typical of the volcanic territory. The luminosity and intense golden yellow color anticipate a bouquet rich in broad nuances of yellow flowers, fruit in syrup, pineapple and apricot, refreshed by hints of citrus and Mediterranean scrub. The mouth is soft, savory, with an inviting acidity and good body.
